INGREDIENTS
6 parts white cabbage
1 part carrot
1 part onion
*Heinz Salad Cream
Sugar
Just start with the
cabbage and add a sixth of the cabbage weight in carrots and also in
onions.
It is essential that all the vegetables are very very finely
chopped...not shredded as is usual with coleslaw. I use a food
processor and use the pulse button so as not to over chop.
To the vegetables add Heinz Salad Cream*, and a little sugar, to taste. The vegetables should be very well coated with the Salad Cream.
I never add salt as there is enough in the Salad Cream and I never add pepper as you will find the day after that the coleslaw tastes quite peppery which comes naturally from the cabbage.
*Heinz Salad Cream is what it is called in England. It is NOT mayonnaise but is of similar consistency, pale yellow in colour and more vinegary in taste. See link..

PS: In 1980 we went to Louisville to join the celebrations for the Colonel's 90th birthday on 9th September. His chauffeur Dick collected us from the airport and took us to his house where we met the Colonel and his daughters, Margaret and Mildred. We had brought the Colonel a gift from England, a huge stick of Blackpool Rock, the biggest we could find and he was thrilled with it! Meanwhile Margaret and Mildred had been in the kitchen making corn fritters and he was soon telling them off for not making them correctly! You can find his recipe for corn fritters in the Colonel's Recipe Book, along with many other recipes...
